Cannelloni



You can buy pre-made pasta for this, but they're hard to stuff with the filling . . . these you just make flat and roll them up around the filling - easy!  Plus homemade pasta is so easy to make, and it tastes way better than store bought pasta.  So why not give making your own pasta a try?  You'll never go back. 

Cannelloni read to go in the oven

Ingredients for filling
2 tbl. olive oil
½ cup onion, finely chopped
2 cloves garlic, smashed & minced
6 to 7 large mushrooms, chopped
1 lb. Italian sausage, skins removed
2 tbl. sherry
dash of salt
dash of ground black pepper
½ cup Ricotta cheese
3 tbl. Parmesan cheese
½ cup Mozzarella cheese, coarsely grated
fresh pasta dough (see recipe below)
tomato sauce # 1
additional ¼ cup Parmesan cheese


Directions for filling
·         Heat the olive oil in a skillet over medium heat and add the onions and garlic, cook and stir 2-3 minutes
·         Add mushrooms and cook another 3-4 minutes, stirring often
·         Add the Italian sausage (break up with a spoon) and sherry, and cook, stirring often until most of the liquid is gone and sausage is done, 4-5 minutes
·         Add the salt & pepper to the mixture and cook about one more minute, then remove from heat and let cool slightly
·         Add Ricotta, Parmesan and Mozzarella cheeses and mix well


Fresh Pasta Ingredients
2 cups flour (we use 1 cup Semolina flour, 1 cup all purpose)
dash salt
2 eggs, lightly beaten

Directions for pasta
·         Sift the flour and salt into a large bowl
·         Add the eggs and mix together well, then knead for about 10 minutes (if too dry add a little bit of water)
·         Shape dough into a ball, lightly flour and let rest about 15 minutes
·         Divide the dough into 8 pieces and roll each dough ball out into about 10”x10” square noodles
·         Bring a large pot of lightly salted water to a boil
·         Add the pasta 3 at a time, boil until done (about 5 minutes each batch)
·         Carefully remove pasta to a bowl of cold water to cool, then drain water off in a colander
·         Divide the filling into 8 equal parts
·         Lay out each piece of pasta and add one portion of the filling and roll up (Burrito style)
·         Place 1 cup of tomato sauce #___ in the bottom of a large baking pan
·         Lay the rolled up Cannelloni in the baking pan and top with the remaining sauce
·         Add about another ¼ cup Parmesan cheese on top of the sauce
·         Bake at 350° for 30-45 minutes, until cheese is melted and bubbly
