We just got back from a wonderful camping trip with friends,
and Chef Tom offered to make breakfast for everyone on Saturday. He made his famous Biscuits & Gravy dish
(a favorite of ours.) Since we already blogged
Camp Biscuits
a while back, we’ll just direct you to that page for the biscuit recipe. It’s the sausage gravy (below) that really
makes this dish. These are perfect for
camping or any old time you want, and they are very filling if you’ve got a
large crowd to feed! No they are not
low-cal or vegetarian, but you can use whatever kind of sausage you prefer
(i.e. turkey sausage, tofu sausage, etc.) to lighten them up a bit.

Ingredients
1 lb. of ground pork sausage
1 tbl. vegetable oil
1/3 cup all purpose flour
good dash of ground black pepper
pinch of salt
½ of a medium onion, chopped
3 cups whole milk
Directions
·
Cook your CampBiscuits as directed and keep warm in a low oven
·
Put the sausage in a large skillet and break it
up with a fork
·
Add the vegetable oil and cook over medium heat,
stirring often, until no longer pink
·
Add the chopped onions and continue cooking and
stirring until the sausage is thoroughly cooked
·
Reduce heat to medium-low and slowly stir in the
flour
·
Continue cooking while stirring constantly about
4-5 minutes until the flour begins to slightly darken
·
Pour in half of the milk and stir or whisk until
it starts to thicken
·
Add the remaining milk (you might want to adjust
the milk measurement to get the thickness you like)
·
Split your biscuits in half with a fork and pour
the hot sausage gravy over the biscuit halves
·
Serve hot and enjoy!
