BBQ Ribs - simply the best!



I know, I know.  Everyone has their own rib recipe that they think is the best.  Well this one really is.  The ribs come out so tender they practically fall off the bone, and the marinade is to die for.  Give this one a try next time you’re having a barbeque.  But be aware that you need to prep the ribs 24 hours ahead of time.

For the marinade
4 to 8 oz. apple juice
8 oz. jelled cranberry sauce
1 tbl. lemon juice
½ tbl. honey
1 tsp. garlic powder

·         Put all ingredients into a large saucepan over medium heat and stir often
·         Continue cooking over medium-low at a slow simmer until reduced to about 2 cups (about 1 ½ to 2 hours)
·         Set aside until ready to use

For the rub
1 tsp. ground black pepper
1 tsp. cumin
1 tsp. paprika
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. Garam Masala (seasoning)

·         Mix all of the rub ingredients together and set aside

For the ribs
1 large rack of ribs (4 to 5 lbs.)
3 tbl. Dijon or spicy brown mustard
1 large onion, sliced
4 tbl. lemon juice
·         Cut the rack of ribs in half
·         Spread lemon juice over both sides of the ribs
·         Sprinkle evenly with the rub mix
·         Place in a large pan, pour the marinade over the ribs, cover and refrigerate for 24 hours
·         Remove ribs from refrigerator about 30 minutes before you’re ready to cook them
·         Rub mustard evenly over both sides of the ribs
·         Place on the smoker for about 2 ½ hours, basting once or twice with the marinade and turning once. Add more wood to the smoker as needed.We use oak, hickory and cherry.  Try to keep the temp. close to 225 degrees.
·         Remove from smoker and cook over coals for about 30 seconds per side.. and brush once more with the marinade
·         Top with the sliced onions
·         Wrap the ribs in aluminum foil and seal tightly around the edges
·         Bake at 325° in the oven for about 2 more hours, turning the packet of ribs a few times while cooking
·         Remove from open and remove foil (carefully) and serve while hot.  Yum!!We like to cook the leftover marinade for 10-15 min. and serve with the ribs.
