Grilled Egg, Ham & Cheese Sandwiches

Here's a quickie recipe for a Friday night, or that Saturday afternoon football game!   Would probably also be good for breakfast.  This recipe makes 4 sandwiches.



Grilled Egg, Ham & Cheese Sandwiches.


Ingredients
4 tbl. butter
1 tbl. olive oil
1 large onion, sliced into rings
4 eggs
10 slices Swiss cheese, cut in half
12 thin slices of ham
8 slices of Italian or sourdough bread
1 additional tbl. of butter
salt & pepper to taste
1 tbl. Parmesan cheese
For Mustard sauce:  1 tbl. brown mustard, 1 tbl. mayonnaise, 1 tbl. yogurt

Directions
·         In a small skillet, heat the butter & olive oil over medium heat until melted
·         Add the onions, cook & stir for about 4-5 minutes until softened and just beginning to brown.  Then remove & drain on paper towels, reserving the butter/olive oil mixture for later
·         Lightly beat each egg separately in small bowls
·         Melt 1 tbl. butter in a small skillet over medium heat and cook the eggs (separately) for about 1 minute on each side
·         Sprinkle the eggs with salt & pepper and set aside
·          Brush one side of each slice of bread with the mustard sauce
·         Layer one side of each sandwich with 3 ham slices and 5 Swiss cheese slices, and top with the egg
·         Put the sandwich together and brush the outside with the rest of the olive oil/butter mixture
·         Sprinkle each sandwich with a little Parmesan cheese
·         Fry in an ungreased pan on both sides until lightly browned, turning once (we use a George Foreman grill for this instead of a skillet, but both will work)
·         Serve hot with a side of our Baked Potato Fries and some of Tom's World Famous Dill Pickles!
