This dressing is
great over a fresh Spinach Salad. The
hot dressing will slightly wilt the spinach leaves.
Ingredients
3 strips bacon, coarsely chopped
4 tbl. olive oil
¼ tsp. ground black pepper
2 tbl. onion, finely chopped
1 tbl. sherry
1/8 tsp. garlic powder
1/8 tsp. paprika
4 tbl. Balsamic vinegar
1 tbl. white wine vinegar
½ tsp. fresh tarragon (or ¼ tsp. if you have to use dried)
1 tbl. brown sugar
2 tsp. ketchup
1 tsp. fresh Chervil, chopped (or Parsley if you don’t have
Chervil)
Directions

In a skillet, sauté bacon over medium-low heat
until just done, but not crisp

Remove from heat, and add the olive oil, black
pepper, onions, sherry, garlic powder, and paprika
·
Stir until mixed well, then return to heat over
medium-low for about 3 minutes, stirring occasionally, until onions are tender
·
Remove from heat again and add the Balsamic
vinegar, white wine vinegar, tarragaon, and brown sugar
·
Mix well
·
Add the ketchup and Chervil, and mix well again
·
Put into a small saucepan and set aside until
ready to heat up to pour over salad
Note: you can also serve this
cold if you prefer, but it’s better hot!)

Makes enough for 4 to 6 people
