Tuna Melts

I have high cholesterol, and my doc told me years ago to eat lots of tuna and oatmeal.  Now I love tuna (not so hot on oatmeal), but we're always looking for new and interesting ways to make it so it doesn't get boring.  This is an old favorite "comfort food" for me.  Makes for a great quickie lunch or Friday night dinner, when we just want something easy to make. This recipe makes 4 sandwiches.  Dig in!




Ingredients
Three 5-oz. cans tuna, drained (we like Albacore, but any kind will work)
2 tbl. celery, finely chopped
2 tbl. onion, finely chopped
1 tsp. fresh parsley finely chopped (or ½ tsp. dried parsley)
¼ tsp. fresh dill (or 1/8 tsp. dried)
1/8 tsp. ground black pepper
1 tsp. brown mustard
1/3 cup mayonnaise
1 hard-boiled egg, chopped
8 slices of bread (we like to use Sourdough, 5-grain, English Muffin Bread, or Rye)
4 slices of sharp cheddar cheese
2 tbl. butter, melted
1 tbl. Parmesan cheese

Directions
·        Break the tuna up with a fork in a large bowl
·        Add celery, onion, parsley, dill, black pepper, mustard, mayonnaise and hard-boiled egg, and mix well
·        spread a little bit of mayonnaise on the inside of the bread slices, and sprinkle lightly with Parmesan
·        put one cheddar cheese slice on each side of the bread (top & bottom, inside)
·        spread tuna mixture onto the sandwiches
·        brush the outside of the sandwiches with a little melted butter
·        lightly spray the inside of a 10” skillet with olive oil or butter spray
·        fry the sandwiches in a skillet, over medium-low heat, until lightly brown (turning once)
·        cut in half and serve with your favorite toppings (lettuce, tomato, onion, pickes, etc.)

We like to serve these with baked fries or homemade potato chips.
