Zucchini Skillet

Here's an easy one-skillet vegetable dish made with a few of the latest fresh offerings from our garden.  Enjoy!
This one skillet Zucchini squash dish is easy to make and delicious!



Ingredients
2 tbl. butter
1 tbl. olive oil
½ large onion, cut in half then into ¼” strips
2 large Cubanelle-type pepper (or 4 Banana peppers), cut in half and sliced into ¼” strips
2 cloves garlic, minced
3 medium Zucchini squash
sea salt to taste
ground black pepper to taste
pinch of Paprika
3 medium plum tomatoes, seeded & quartered
2 tbl. sherry
1 tbl. water
2 tbl. Parmesan cheese, grated

Directions
·        In a large skillet, melt the butter over medium heat and add the olive oil
·        Add the onions, peppers & garlic, and sautĂ© over medium-low until almost done, 6-7 minutes
·        Add the zucchini squash, salt, pepper & paprika and continue cooking & stirring about 8 minutes
·        Add the tomatoes, sherry, and water
·        Increase heat to medium-high, cook & stir until most of the liquid is gone
·        Remove from heat and sprinkle with Parmesan cheese
·        Broil in the oven for 3-4 minutes, until cheese is just starting to melt
