Shrimp Bake



We had some shrimp we didn’t know what to do with, so threw this recipe together over the weekend.  Turned out fabulous!  Next time you’re wanting something just a little fancier for your shrimp, give this one a try.  This makes about 4 servings, and can be made in individual baking dishes as a side-dish.
Easy Shrimp Bake
Ingredients
12 to 16 oz. medium shrimp, peeled and deveined
¼ cup lemon juice
3 tsp. fresh oregano, chopped
½ tsp. sea salt
½ tsp. white pepper
¼ cup red onion, chopped
3 tbl. olive oil
4 cups fresh spinach, stems removed
3 oz. feta cheese, crumbled

Directions
·         Place shrimp in a bowl and combine with lemon juice, oregano, salt & white pepper and mix well
·         Cover shrimp mixture and refrigerate for 45 minutes, then drain reserving the marinade
·         Heat olive oil in a skillet and sauté the shrimp for 2 minutes, then remove immediately with a slotted spoon and set aside
·         Add red onion and sauté for 2-3 minutes over medium heat
·         Pour the resereved marinade into the pan then add the spinach
·         cook for about 3-4 more minutes, then return the shrimp to the pan, crumble feta over the top
·         Move shrimp mixture into a baking dish
·         Bake at 350° for about 20 minutes.  Serve hot.  
Hot out of the oven!
