Spinach & Goat Cheese Muffins

These are going on our "favorite" list.  We may try a bit of diced onion in the next batch, too!

Spinach & Goat Cheese Muffin.

These are great by themselves, would make a really special appetizer (in a mini-muffin pan, maybe?), or as a bread side-dish with any meal.  And they're very easy to make.  Go ahead, give them a try!
