Tartar Sauce

1 cup mayonnaise
11/2 tbl. finely minced onion
1 tbl. fresh tarragon, finely minced (or ½ tbl. dried tarragon)
¼ cup minced dill pickles (squeeze out liquid and pat dry before mincing!)
½ tsp. sugar
½ tsp. Dijon mustard
3/4 tbl. red wine vinegar
2 tea chopped capers
·         Mix all ingredients together in a bowl
·         Cover and refrigerate until ready to use, at least one hour
