Duxelles with Minced Onions and Sage

8 oz. fresh mushrooms
2 tbl. minced onions
1 tbl. fresh sage, finely minced
1 tbl. butter
1 tbl. olive oil

Finely chopped mushrooms, ready to saute'.
  • Finely chop the mushrooms
  • Melt butter and olive oil together in skillet
  • Sautee the mushrooms, onions and sage over medium low heat, very slow (10 -15 minutes) in the butter/oil mixture until tender, stirring often so they don’t stick
Sauteed mushrooms, ready for use.
 So simple, yet so good on so many dishes!  Try adding fresh parsley or thyme . . . any kind of fresh herbs if you grow them would make this even better.
