These
are super easy to make and come out perfect every time. Goes good with seafood or any kind of main
dish. You can make the batter ahead of
time and refrigerate until ready to bake.
This recipe makes about 16 medium-size biscuits.
Ingredients
4 tbl. olive oil
4 tbl. butter
16 medium to large raw
shrimp, peeled and chopped
2 tbl. blackened steak or
seafood seasoning
2 1/2 cups Bisquick
1
cup milk
1 cup Cheddar cheese,
shredded
good pinch of garlic
powder
good pinch of ground black
pepper
good pinch of cayenne
pepper
2 tsp. fresh parsley,
chopped (or you can use dried)
Directions

In a large
skillet, combine the olive oil and butter and bring to high heat

Toss the
shrimp in a bowl with the blackened seasoning until well coated
·
When the oil
is hot, fry the shrimp quickly (about 2 minutes per side), turning once
·
Remove the
shrimp with a spatula and set the oil aside to cool for later use
·
After allowing
the shrimp to cool a bit, chop into fairly small pieces
·
Heat the oven
to 350°F.
·
In a bowl,
combine the Bisquick, milk, cheddar, and shrimp and mix until a smooth dough
forms (you might need to add a bit more milk if it seems too dry – you want
these a little on the wetter side, but not too wet.)

Drop the dough
by the spoonful (about 2 tbl. each) onto an ungreased cookie sheet

Bake for about
10 to12 minutes (I turn them once during baking because our oven cooks a bit
hotter on the bottom than the top – you might not need to) until they turn a
golden brown
·
Pour the
reserved oil from frying the shrimp into a small bowl and mix in the garlic
powder, black pepper, cayenne pepper, and parsley (you can re-heat the oil first
if necessary)

Brush the tops
of the hot biscuits with the oil before serving (or you can just let people put
their own on with a spoon at the table)
