Chicken-Potato Croquettes



These are actually pretty low-calorie.  We discovered them when we were dieting last year.  Serves 6-8.

Ingredients
16 oz. chicken breast
1/8 tsp. garlic powder
good dash of sea salt (for chicken breast)
good dash ground black pepper (for chicken breast)
1 tbl. lemon juice
3 tsp. olive oil
8 medium red potatoes
¾ cup low-sodium chicken broth
3 cloves garlic, smashed & chopped
1 medium onion, chopped
5 large button mushrooms, peeled and finely chopped
1/3 cup fresh parsley,chopped
salt & pepper to taste
1 cup Panko breadcrumbs
½ cup flour
2 eggs, whisked
olive oil spray
Chicken-Potato Croquettes, topped with sauted mushrooms


Directions
·         Sprinkle chicken breast with garlic powder, dashes of salt & pepper, and lemon juice
·         Rub all sides of chicken breast with 1 tsp. of the olive oil
·         Bake on a baking pan at 350° for about 45 minutes, or until thoroughly cooked and lightly browned
·         Remove from oven, set aside and let cool
·         When cooled, remove the skin and de-bone the chicken, then shred the meat with two forks and set aside until ready to use
·         Steam the potatoes until thoroughly cooked
·         Mash the steamed potatoes with ¼ cup of the chicken broth, and salt & pepper to taste
·         In a small skillet, add the other 2 tsp. of olive oil
·         SautĂ© the garlic, onion & mushrooms in the oil over medium heat for about 4 minutes
·         Add the parsley, salt & pepper to taste, and cook until soft (4-5 minutes)
·         Add the shredded chicken and remaining broth and mix well and continue cooking another 4-5 minutes
·         Remove from
·         Add the chicken mixture from the skillet into the mashed potatoes and mix well
·         Refrigerate for one hour
·         Heat the oven to 425°
·         Form the potato/chicken mixture into croquettes (log-shaped) using about 1/3 cup of the mixture for each croquette
·         Place croquettes on a tray lined with wax paper
·         Dip each croquette into the flour, whisked eggs, then Panko bread crumbs until well coated on all sides
·         Lightly spray a baking sheet with olive oil spray, and lay the coated croquettes on the tray
·         Spray each croquette liberally with olive oil spray on both sides
·         Bake 15-20 minutes (turning once) until golden brown
