New Potatoes



The term “new potatoes” may mean different things to different people, but to us it means the potatoes just came out of the ground in our garden.  If you’ve never had a freshly dug potato, there is now way to describe it to you.  The skins are so tender you leave them on when cooking.  When you cut into a raw new potato it “pops” it’s so fresh, and when they are cooked they just melt in your mouth.  Here’s a very simple recipe that we like to make when the potatoes start to come in.  There’s nothing better than a New Potato!
 
New Potatoes, out of the ground about 5 minutes.

Ingredients
2 lb. fresh medium potatoes
2 tbl. parsley, chopped
1 tsp. dill, chopped (or dried)
4 tbl. butter
1/8 tsp. salt
1/8 tsp. ground black pepper
1 tbl. olive oil

New Potatoes garnished with chives, salt & pepper.  They just melt in your mouth!

Directions
·        Wash the new potatoes and cut into bite-sized pieces (do not peel)
·        Steam the potatoes until tender, rinse with cold water and set aside to drain and cool
·        Melt butter in a large skillet, add olive oil, heat until sizzling
·        Remove butter and oil from heat, and add parsley, dill, salt and pepper
·        Increase heat to low, and add the potatoes to the butter mixture and toss well
·        Cook potatoes in butter mixture about 5 minutes, then top with chives and enjoy!  Serves 4.

Potatoes are a lot of work to grow, but they are worth it!
